Tasting Notes

Appearance
This mezcal boasts an impeccable crystal-clear hue with silver highlights that reflect its purity and artisanal production process. The tears in the glass descend slowly, showcasing a silky texture and a structured body.

Nose
The aromatic profile is intense and complex. On the first impression, distinctive smoky notes stand out, perfectly balanced with a fresh herbal touch that evokes regional herbs such as epazote and poleo. With deeper aeration, secondary aromas of toasted almond emerge, accompanied by a subtle sweetness of cooked agave, honey, and delicate citrus hints of orange peel.

Palate
On the palate, this mezcal reveals a smooth entry with a firm character. Smoky flavors dominate initially, followed by earthy and mineral notes that reflect Malinalco's unique terroir. Bitter cacao, vanilla, and sweet spices like cinnamon also stand out, adding depth to the profile. Its balance between acidity and sweetness is remarkable, leaving a lingering aftertaste with hints of black pepper and wood.

Pairing
Perfect to accompany traditional dishes such as barbacoa, cecina tacos with avocado, or spiced mole. It also pairs beautifully with aged cheeses and dark chocolate desserts.

Recommended Serving
Serve at room temperature in wide-mouthed glasses to highlight its aromatic complexity, accompanied by orange slices and worm salt for a more traditional experience.

This mezcal is a worthy representative of the artisanal spirit and cultural richness of Malinalco, with a perfect balance between tradition and excellence that earned it the Revelation Award for Spirits in 2024.
